Description
Tuna patties/cakes are delicious served on their own with a salad for a quick dinner or
between a hamburger bun as an alternative to a beef burger.
Ingredients
12 oz can of tuna, drained well
1 large egg
¼ cup white onion, finely chopped
2 tablespoons chopped fresh or dried parsley
1 tablespoon mayonnaise
1 teaspoon sweet or dill relish
The zest and juice of half a lemon
½ teaspoon kosher salt or to taste
¼ teaspoon pepper or to taste
½ cup butter cracker crumbs
- or Saltine crackers or plain bread crumbs if desired
2-4 tablespoons of your favorite cooking oil
Instructions
In a large bowl add the drained and flaked tuna, onion and parsley and toss. In a small bowl
add the egg, mayo, relish and zest and juice and mix well and add to the tuna. Sprinkle the
butter crackers over the top and combine all ingredients well. Divide into the number of
patties you want (this recipe will make 4 large patties or 6-8 smaller cakes). Heat your frying
pan over medium high heat for 3-4 minutes, add cooking oil. Gently add the patties into the
pan and cook until browned on each side (about 4-5 minutes each side). Serve warm.
